Per the manufacturer, they are not available in other colors other than what is listed, including amber. No they cannot all be wired seperately.

These LED map lights are to be wired into the aircraft power supply. There are two wires: one with white stripe (+) and one all black (-). They are intended to be connected directly to a power source.

No, there is no switch. You would need to wire it to a switch or dimmer.
