Q: does the machine thread shrink in the ironing process along with the fabric, or is it pre-shrunk and heat-stable?

Usually the glue joint, over the ribs and the seam that is sewed does not need to see direct heat from the iron. Also, all these areas are going to be overlaid with finishing tape as well.

Q: Does this thread have UV protection?

No, UV protection needs to be sprayed on the fabric.
